  • 450grams Rustica Stone Baked Sourdough Supreme Pizza
  • 2 red capsicums, sliced
  • 2 yellow capsicums, sliced
  • 1/4 cup extra virgin olive oil
  • 1/4 cup garlic aioli
  • 1 lemon juiced, juiced
  • 1/2 bunch red radishes, thinly sliced
  • 110grams green olives with lemon & herbs, coarsely chopped
  • 1/2 bunch continental parsley, leaves picked
  • 1/4 cup basil leaves

Description

Paired with a refreshing salad, this delectable Rustica by McCain pizza is perfect for effortless spring entertaining.

Method

Step 1 of 3

Preheat oven to 200°C/180°C. Line two baking trays with baking paper. Place pizza on a prepared tray. Cook pizza following packet instructions or until golden-brown and crispy.

Step 2 of 3

Meanwhile, place capsicum on the remaining tray. Drizzle with 2 tbs oil. Bake for 20-25 minutes, turning halfway, or until tender. Whisk aioli, juice and remaining oil in a bowl.

Step 3 of 3

Transfer capsicum to a large serving plate. Add radish, olives and parsley and toss to combine. Drizzle with aioli dressing. Top pizza with basil. Serve with salad.
