  • 100grams Woolworths sesame seeds
  • 2 Woolworths eggs

  • 1/4 head Savoy cabbage
  • 2 Lebanese cucumbers, sliced into rounds
  • 200grams tzatziki
  • 150grams Woolworths Danish-style feta, crumbled

Description

Bursting with Mediterranean flavours, this low-cost cauliflower schnitzel dish with tangy feta and a refreshing tzatziki slaw will hit the spot.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Grease and line a large baking tray with baking paper. Place onion in a shallow glass bowl. Add vinegar and set aside for 30 minutes. Drain.

Meanwhile, using a large sharp knife, cut cauliflower into 4 equal steaks.

Place sesame seeds on a flat plate. Whisk eggs in a shallow bowl. Working in batches, dip cauliflower in egg to coat, allowing any excess to drip off, then coat in sesame seeds. Place cauliflower on prepared tray. Spray with oil. Roast for 25-30 minutes, turning halfway, or until tender and golden-brown.

Using a large knife, thinly slice cabbage and place in a large bowl. Add cucumber and tzatziki. Toss to combine. Spoon onto plates. Sprinkle with half of the feta. Top with cauliflower, onion and remaining feta. Season with freshly cracked black pepper. Serve.
