  • 1/4 white cabbage, shredded
  • 3 small Granny Smith apples, thinly sliced
  • 1 small red onion, thinly sliced

Cajun-spiced black-bean patties pair perfectly with a refreshing apple slaw in this budget-friendly dish, creating a tantalising fusion of textures and tastes in every bite.

For extra thin slices, use a mandolin. It’s perfect for shredding and slicing vegetables and fruit.

Method

Step 1 of 4

Process bread to make fine crumbs. Add meatballs, beans, seasoning and 1 clove of garlic. Mix well. Shape into 12 patties.

Step 2 of 4

Heat oil in a large non-stick frying pan over medium-high heat. Cook patties, in 3 batches, for 5 minutes, turning occasionally, or until cooked and browned.

Step 3 of 4

Process yoghurt, half of the mint and remaining garlic until almost smooth.

Step 4 of 4

Spoon yoghurt mixture onto plates. Top with cabbage, apple and onion. Add patties to plates. Season with freshly cracked black pepper. Serve sprinkled with remaining mint.
