  • 200grams snow peas
  • 1 cube chicken stock
  • 500grams Woolworths RSPCA Approved chicken breast fillets
  • 1/4 cup Macro Organic hulled tahini
  • 2 limes juiced
  • 1 clove small garlic, crushed
  • 1/4 red cabbage, finely shredded
  • 1/2 large fennel, shaved
  • 1 zucchini, peeled into ribbons
  • 1/4 bunch mint, leaves removed, large leaves coarsely torn

Description

Pop this vibrant and refreshing salad on the menu and treat everyone to a perfect light and healthy meal.

Method

Step 1 of 4

Bring a 20cm (base measurement) saucepan of water to the boil. Add snow peas. Cook for 1 minute, then drain and run under cold water. Set aside to cool. Add 6 cups water and stock to saucepan. Bring to a simmer over high heat. Reduce heat to low. Add chicken. Cover and simmer, turning chicken halfway through, for 10 minutes. Turn off heat. Set aside, covered, for a further 10 minutes. Remove chicken from saucepan.

Step 2 of 4

Place tahini, 3 tbs lime juice, garlic and 1 tbs warm water in a small bowl. Whisk until well combined. Season.

Step 3 of 4

Cut snow peas in half lengthways. Place snow peas, cabbage, fennel, zucchini and half of the mint in a large bowl. Toss to combine. Thinly slice chicken.

Step 4 of 4

Arrange salad and chicken on a serving platter. Drizzle with dressing. Scatter with remaining mint. Season with freshly cracked pepper. Serve.
