  • 5 Woolworths soft grain wraps
  • 5milliliter extra virgin olive oil cooking spray
  • 1/2teaspoons Mexican chilli spice blend
  • 2/3 cup reduced-fat Greek-style natural yoghurt
  • 1 lime zested juiced grated
  • 2packets cos lettuce hearts, coarsely chopped
  • 6 tomatoes, chopped
  • 210grams canned Woolworths no-added-salt black beans, drained, rinsed
  • 500grams Woolworths frozen corn, thawed
  • 2 avocados, chopped
  • 1 bunch coriander, leaves picked

Description

Liven up the party spread with a salad that's bursting with colour and flavour. It gets better and brighter with every layer.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Line a large baking tray with baking paper. Cut wraps in half. Divide into 2 stacks. Using kitchen scissors, cut wraps crossways into short 5mm-thick strips. Place strips on lined tray. Spray with oil and sprinkle with spice blend. Using your hands, scrunch up the wraps to crease. Bake for 10 minutes or until golden. Set aside to cool.

Combine yoghurt, zest, juice and 1 tbs water in a small bowl.

Step 3 of 3

Place lettuce over the base of a 3L (12-cup-capacity) trifle bowl. Top with tomato, beans, corn, avocado, chips and coriander. Drizzle with dressing and serve.
