- 1tablespoons extra virgin olive oil
- 1 brown onion, finely chopped
- 1 bunch coriander, leaves reserved, stems finely chopped
- 1 1/2 cups long-grain white rice
- 35grams nacho spice mix
- 250grams Woolworths cooked jumbo prawns
- 2 tomatoes, diced
- 150mL Woolworths sour cream
- 200grams Macro Organic original corn chips
- 1 lemon, cut into cheeks
Description
So easy and so tasty, this budget-friendly single-pan dish is packed with Mexican-style flavours, jumbo prawns and a kick of nacho spice.
Method
Step 1 of 3
Heat oil in a large frying pan over low heat. Add onion and coriander stems. Cook for 5 minutes or until softened.
Step 2 of 3
Increase heat to medium. Add rice, 2 cups water and spice mix. Stir to combine. Bring to a simmer. Reduce heat to low. Cover and simmer for 20 minutes.
Step 3 of 3
Add prawns to rice mixture. Stir to combine. Cook for a further 5 minutes or until the prawns are heated through and the rice is tender. Top with tomatoes, sour cream and coriander leaves. Serve with corn chips and lemon.
