  • 2tablespoons extra virgin olive oil
  • 2 brown onions, thinly sliced
  • 1 beetroot, coarsely grated
  • 1tablespoons brown sugar
  • 1tablespoons balsamic vinegar
  • 1/2 cup Woolworths whole egg mayonnaise
  • 1/2 punnet fresh dill, chopped
  • 1 Woolworths crusty baguette
  • 150grams rare roast beef slices
  • 60grams Woolworths baby rocket leaves

Description

Ready in under an hour and easily transportable, these juicy, flavour-packed baguettes feature rare roast beef, beetroot, rocket and caramelised onion.

Prep tip:
Make the caramelised onion up to 4 days ahead and store in an airtight container in the fridge.

Method

Step 1 of 3

Heat oil in a medium saucepan over medium heat. Add onions. Cook, stirring often, for 2 minutes. Add beetroot and stir to coat. Cover and reduce heat to low. Cook, stirring once, for 10 minutes. Remove the lid. Cook for a further 5 minutes. Increase heat to medium. Stir in sugar and vinegar. Cook for 2 minutes. Remove from heat. Season. Set aside to cool completely.

Step 2 of 3

Place mayonnaise, dill and 2 tsp water in a small bowl. Season. Stir to combine.

Step 3 of 3

Cut baguette in half crossways, then horizontally. Spread onion over bases. Top with beef and rocket. Drizzle with mayonnaise mixture. Top with lids. Cut each baguette in half. Serve.
