  • 100grams prosciutto
  • 2 radishes
  • 120grams Woolworths baby spinach & rocket
  • 2 large oranges, peeled, thinly sliced
  • 1/2 large fennel, very thinly sliced
  • 1/4 punnet Woolworths dill sprigs, picked
  • 1/4 cup raspberry jam vinaigrette

Description

This fresh and colorful salad can be enjoyed on its own as a light lunch or as a colorful side for a full, delicious meal.

Method

Step 1 of 4

Preheat oven to 200°C/180°C fan-forced. Place prosciutto on a baking tray in a single layer. Cook, turning halfway through, for 8 minutes or until golden. Set aside on tray to cool.

Step 2 of 4

Meanwhile, peel radish into very thin slices.

Step 3 of 4

Place radish, leaf mix, orange, fennel and half of the dill in a large bowl. Season. Drizzle with half of the dressing.

Step 4 of 4

Break prosciutto into long shards. Divide salad and prosciutto among serving plates. Drizzle with remaining dressing. Scatter with remaining dill.
