Description
Tender roasted sweet potatoes are served atop creamy labne in this easy, four-ingredient savoury dish that is both comforting and sophisticated.
Method
Step 1 of 3
Line a sieve with muslin cloth. Place prepared sieve over a bowl. Add yoghurt to sieve. Cover and place in the fridge for 6 hours to drain.
Step 2 of 3
Meanwhile, preheat oven to 200°C/180°C fan-forced. Grease and line a baking tray with baking paper. Cut potato in half lengthways, then into 2cm-thick slices. Place potato on prepared tray. Drizzle with 1/3 cup honey and oil. Turn to coat. Roast for 25-30 minutes or until golden brown and tender.
Step 3 of 3
Spoon labne onto a large plate. Top with potato. Drizzle with remaining honey. Serve sprinkled with coriander.
