  • 200grams panettone
  • 80grams unsalted butter
  • 200grams button mushrooms, quartered
  • 200grams sliced Swiss brown mushrooms
  • 2 cloves garlic, crushed
  • 1/3 punnet rosemary, leaves picked
  • 1/2 cup Woolworths salt-reduced chicken stock
  • 1/3 cup Woolworths hazelnuts, toasted, chopped

Description

A savoury twist on a classic sweet bread, this stuffing combines earthy mushrooms, crunchy hazelnuts and aromatic herbs to elevate your festive main courses.

Method

Step 1 of 4

Process panettone until fine crumbs form.

Step 2 of 4

Melt half of the butter in a large frying pan over medium-high heat. Add mushrooms, garlic and half of the rosemary. Cook, stirring, for 8 minutes or until mushrooms are golden and tender. Transfer to a large bowl.

Step 3 of 4

Melt remaining butter in pan. Add panettone crumbs and cook, stirring, for 3 minutes or until golden. Add stock and cook, stirring to combine, for 2 minutes or until the crumbs have absorbed the liquid.

Step 4 of 4

Return mushroom mixture to pan. Add hazelnuts and remaining rosemary. Mix until well combined.
