  • 2tablespoons sambal oelek
  • 1 lime, zest finely grated, juiced
  • 1/2 cup Woolworths vegetable oil
  • 8 wonton wrappers, halved diagonally
  • 1/4 bunch coriander, leaves picked
  • 1 Lebanese cucumber, thinly sliced
  • 16 cooked tiger prawns, peeled, tails in tact

Method

Step 1 of 4

Combine mayonnaise, sambal oelek, lime zest and juice in a small bowl. Season.

Step 2 of 4

Add oil to a medium saucepan to reach a depth of 2cm (if not, add extra oil). Heat over medium-high heat. Cook wonton wrappers, in batches, for 2 minutes or until golden. Transfer to a baking tray lined with paper towel to drain.

Step 3 of 4

Pat coriander leaves dry. Carefully add coriander to oil and cook for 20 seconds or until crisp. Transfer to a plate lined with paper towel to drain.

Step 4 of 4

Arrange wontons on a serving platter. Top with mayonnaise mixture, cucumber, prawns and coriander. Serve.
