  • 1/4 cup Woolworths pepitas
  • 1teaspoons Woolworths smoked paprika
  • 110grams Woolworths mixed olives, finely chopped
  • 1/4 bunch coriander, chopped
  • 1 1/2tablespoons extra virgin olive oil
  • 1 lemon, zest finely grated, juiced
  • 375grams Woolworths smooth ricotta
  • 420grams Woolworths canned no-added-salt chickpeas (see tip), drained
  • 1tablespoons Macro Organic hulled tahini
  • 1 clove garlic, chopped
  • 125grams grissini (see tip)

Description

Take your dip game to the next level by combining the smooth creaminess of ricotta cheese with the savoury flavours of traditional hummus, all topped with a vibrant gremolata.

Method

Step 1 of 4

Preheat oven to 180°C/160°C fan-forced. Line a large baking tray with baking paper. Spread pepitas over prepared tray. Sprinkle with paprika. Bake for 5 minutes or until golden.

Step 2 of 4

Combine olives, coriander, 1 tbs oil and 2 tsp lemon juice in a small bowl. Season.

Step 3 of 4

Using a food processor, process ricotta, chickpeas, tahini, garlic and remaining lemon juice, or use a stick blender to blend until smooth. Season.

Step 4 of 4

Spoon hummus onto a plate. Top with olive mixture. Drizzle with remaining oil and sprinkle with pepitas and lemon zest. Serve with grissini.
