Instruction tip
Shopping tip:
You can find lobster tails in the seafood cabinet during the festive season.

Method

Step 1 of 3

Finely grate zest of 1 lime, then juice the lime. Cut remaining limes into wedges. Combine zest, juice, cream cheese, Tabasco, three-quarters of the onion and 1 tbs warm water in a large bowl. Season with pepper. Add lobster and gently fold to combine.

Step 2 of 3

Cut baguette into 10 x 3cm-wide pieces. Cut three-quarters of the way through the centre of each piece to create an opening. Spread garlic butter on the 2 outer sides.

Step 3 of 3

Heat a large frying pan over medium heat. Add half of the baguette pieces to the pan, buttered-side down. Cook for 2 minutes each side or until golden. Fill the cavities with the cream-cheese mixture. Sprinkle with remaining onion. Serve with lime wedges.
