  • 1kilograms Woolworths Simply Steam baby white potatoes
  • 1 cup shredded parmesan
  • 2tablespoons polenta
  • 2teaspoons peri peri salt
  • Woolworths extra virgin olive oil cooking spray
  • 1/2 cup Woolworths light sour cream
  • 2tablespoons smokehouse tomato chutney sauce
  • 1/4 bunch continental parsley, leaves picked

Description

Turn on the air fryer and transform the tasty trio of potatoes, polenta and parmesan into golden and crispy smashed polenta potato bites that will become an instant favourite.

Use-it-up tip:
Combine the remaining sour cream with a couple of tablespoons of apple cider vinegar to make a quick, creamy dressing for a Caesar-style salad or even a potato salad.

Method

Step 1 of 3

Cook potatoes in the microwave following packet instructions until tender. Set aside for 5 minutes. Drain. Place potatoes on a large baking tray. Using the back of a large spoon or potato masher, press down on potatoes to squash.

Preheat an air fryer to 180°C. Combine parmesan, polenta and salt in a small bowl. Place half of the potatoes in the air-fryer basket. Spray well with oil. Sprinkle with one-quarter of the parmesan mixture. Cook for 10 minutes. Turn potatoes, spray with oil and sprinkle with one-third of the parmesan mixture. Cook for a further 10 minutes or until golden and crisp. Transfer to a serving platter in a warm place to keep warm. Repeat with remaining potatoes and parmesan mixture.

Place sour cream in a small bowl. Add sauce. Swirl through to create a marbled appearance. Sprinkle potatoes with parsley. Serve with sauce.
