Description
Refreshing and delicious, this delightful and vibrant melon ball salad is quick to whip up and easy on the wallet.
Method
Step 1 of 4
Combine vinegar, honey and 1 tbs oil in a small bowl. Season with freshly cracked black pepper.
Step 2 of 4
Using a melon baller, scoop out balls from rockmelon and honeydew.
Step 3 of 4
Heat remaining oil in a medium frying pan over medium-high heat. Cook prosciutto for 2 minutes each side or until crispy. Tear into coarse pieces.
Step 4 of 4
Place melon balls and bocconcini in a serving dish. Drizzle with dressing. Top with prosciutto and mint. Serve.
