- 1 lime
- 1 large tomato, finely chopped
- 2teaspoons extra virgin olive oil
- 2 spring onions, thinly sliced
- 500grams Woolworths sweet corn, husks removed, halved
- 1/4 cup finely grated parmesan
- 1/2teaspoons cayenne pepper
Description
This chargrilled sweet corn sprinkled with parmesan and cayenne pepper is simple to make and cooked to perfection in a flash. Served with tomato lime salsa, it’s a tasty bite that’s easy to get just right.
Method
Step 1 of 4
Cut half of the lime into thin wedges. Finely grate zest of the other half, then juice it.
Step 2 of 4
Combine zest, juice, tomato, oil and three-quarters of the onion in a small bowl. Season.
Step 3 of 4
Heat a barbecue chargrill or chargrill pan over medium-high heat. Cook corn, turning occasionally, for 10 minutes or until charred and tender.
Step 4 of 4
Place corn on a serving platter. Sprinkle with parmesan, pepper and remaining onion. Serve with salsa.
