  • 500grams Woolworths classic Cumberland pork sausages, casings removed
  • 1 punnet sage, half finely chopped, remaining leaves reserved
  • 1/4 cup Woolworths pistachio kernels, chopped
  • 1 green apple, coarsely grated
  • 1 cup microwave black rice
  • 1 egg, beaten
  • 2 cloves garlic, crushed
  • 250grams streaky bacon

Method

Step 1 of 4

Preheat oven to 180°C/160°C fan-forced. Line a large baking tray with baking paper. Combine sausage meat, chopped sage, pistachio, apple, rice, egg and garlic in a large bowl.

Step 2 of 4

Lay out bacon slices on a chopping board, slightly overlapping. Spoon the stuffing mixture onto the bacon, shaping it into a log. Wrap the bacon around the stuffing.

Step 3 of 4

Place log, seam-side down, on prepared tray. Bake for 25 minutes. Add reserved sage leaves to the tray, coating them in any cooking juices. Return to oven. Cook for a further 10-15 minutes or until the bacon is crispy and the stuffing is cooked through.

Step 4 of 4

Transfer log to a serving platter. Top with fried sage.
