- 650grams Woolworths Cook slow cooked mild Mexican pork shoulder
- 200grams Macro Organic original corn chips
- 2 cups Woolworths shredded tasty cheese
- 2 avocados, chopped
- 1/2 cup Woolworths sour cream
- 1/4 cup sriracha
- 1/4 bunch coriander, leaves picked
- 1/4 iceberg lettuce , shredded
- 200grams Sweet Solanato® tomatoes, halved
- 1 lime, cut into cheeks
Description
Take a leaf out of Hayden Quinn’s recipe book! These moreish nachos with crispy corn chips, slow-cooked pulled pork and melted cheese topped with fresh veggies are a guaranteed crowd-pleaser.
Method
Step 1 of 3
Preheat oven to 200°C/180°C fan-forced. Grease and line a baking tray with baking paper. Prepare pork following packet microwave instructions.
Step 2 of 3
Meanwhile, place chips on prepared tray. Top with half of the cheese and bake for 5 minutes or until melted. Use a slotted spoon to scoop pork onto chips, then sprinkle with remaining cheese. Bake for a further 5-8 minutes or until cheese is melted and golden brown.
Step 3 of 3
Top nachos with avocado, sour cream, sriracha and coriander. Season with freshly cracked black pepper and serve with lettuce, tomato and lime.
