Cheat’s XO Sauce
  • 100grams pancetta, finely chopped
  • 2 golden shallots, finely chopped
  • 4 cloves garlic, crushed
  • 5centimeters piece ginger, finely grated
  • 1 1/2teaspoons Woolworths dried chilli
  • 1/2teaspoons shrimp paste
  • 2tablespoons soy sauce
  • 2tablespoons brown sugar
  • 2tablespoons rice wine vinegar
  • 1/3 cup vegetable oil
  • 4 beef porterhouse steaks
  • 2teaspoons Chinese five-spice powder
  • 2 large eggplants, cut into 4 wedges each
  • 2tablespoons extra virgin olive oil
  • 2 bunches broccolini
  • 1/3 bunch coriander, leaves picked

Description

Hayden Quinn’s delicious cheat's beef with eggplant and a tasty XO sauce is a scrumptious and hearty dish you’ll love serving up for your loved ones.

Method

Step 1 of 5

Place beef on a plate. Sprinkle all over with five-spice powder. Stand for 10 minutes.

Step 2 of 5

To make sauce, heat a medium non-stick frying pan over medium-high heat. Add pancetta and cook, stirring, for 5 minutes, or until crispy. Add shallot, garlic, ginger and chilli and cook, stirring, for 2 minutes or until fragrant. Add paste, soy sauce, sugar and vinegar and cook for a further 2 minutes until reduced slightly. Add oil and continue to cook, stirring occasionally, for a further 2-3 minutes or until crispy.

Meanwhile, preheat a barbecue or chargrill to medium-high. Grill eggplant for 12-15 minutes, turning occasionally until brown and tender. Transfer to a plate.

Brush beef with 1 tbs oil. Add beef to grill and cook for 3 minutes each side for medium-rare or until cooked to your liking. Drizzle remaining oil over broccolini, and grill for 2-3 minutes or until tender. Transfer to a plate. Cover and rest for 5 minutes.

Step 5 of 5

Place beef, eggplant and broccolini on plates. Spoon over sauce. Serve sprinkled with coriander.
