  • 1 lemon, juiced
  • 1 1/2 cups self-raising flour
  • 100grams unsalted butter, melted
  • 1 cup milk
  • 1/2 cup Woolworths Greek-style natural yoghurt
  • 75grams blueberries
  • 1 cup Woolworths vanilla custard

Description

When in doubt, serve up a cobbler! If you want your dessert to be a showstopper, whip out this peach and blueberry cobbler recipe from Hayden Quinn.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Grease a 22cm-top, 1.5L round ovenproof baking dish. Combine peaches, ½ cup sugar, cornflour and lemon juice in a large bowl. Place half of the peaches in prepared dish.

Step 2 of 3

Combine flour and remaining sugar in a large bowl. Make a well at centre. Whisk butter, milk and yoghurt in a jug. Add to flour mixture and stir until smooth. Pour evenly over peaches in dish. Top with remaining peaches and blueberries.

Step 3 of 3

Bake for 35-40 minutes or until golden brown. Stand for 5 minutes. Serve with custard.
