  • 1 lime, zested and juiced
  • 1 small avocado, stoned, peeled, and chopped
  • 1 small mango, stoned, peeled, and chopped
  • 100grams cherry tomatoes, halved
  • 1 red chilli, deseeded and chopped
  • 1/2 small pack of coriander, chopped
  • 1 red onion, finely sliced
  • 250grams Protein Plate Plant Based Chicken Free Strips (Available in the chilled plant-based section)
  • 400grams black beans, drained and rinsed

Method

Step 1 of 3

Zest and juice the lime, chop the avocado and mango, cut the cherry tomatoes in half, de-seed and finely chop the chilli, chop the coriander, and finely slice and the red onion. Put in a bowl and toss to combine.

Step 2 of 3

Heat oil in a pan over medium-high heat. Add Protein Plate Plant-based Chicken Strips and cook until golden and cooked through.

Step 3 of 3

Add Protein Plate Plant-based Chicken Strips to the bowl. Drain and rinse black beans and stir through until salad is combined. Serve immediately.
