- 4 eggs
- 250grams haloumi, sliced
- 1 avocado, sliced
- 250grams microwave quinoa
- 1 lime, juiced
- 1tablespoons olive oil
- 2tablespoons mango dressing
Description
A quick and easy meal that is nutritious and packed with protein.
Method
Step 1 of 4
Cook eggs in a saucepan of boiling water for 7 mins. Peel and cut into quarters.
Step 2 of 4
Meanwhile, heat oil in a pan and fry the haloumi for 2 mins each side.
Step 3 of 4
Cook microwave quinoa, following packet directions. Stir through lime juice.
Step 4 of 4
Serve avocado, egg, haloumi and quinoa in bowls with a drizzle of mango dressing.
