- 2tablespoons white wine vinegar
- 1 pinch salt
- 1tablespoons olive oil
- 1 pinch salt
- 1 lemon, to serve
- 1 pinch freshly ground black pepper
- 1 cucumber
- 1teaspoons caster sugar
- 1 pinch chilli flakes
- 1/4 red onion, finely sliced
- 100grams tuna steaks
- 1teaspoons smoked paprika
Description
Tuna is fabulous to cook on a barbecue; its robust texture holds together well.
Method
Step 1 of 4
Prepare a barbecue for cooking. Slice the cucumber in half lengthways and scoop out the seeds with a spoon. Slice each half again lengthways to make four long, thin pieces. Slice thinly on the diagonal.

In a bowl, whisk together the vinegar, sugar, chilli flakes, and salt. Mix through the sliced cucumber and red onion, cover, and leave in the fridge to rest for 30 minutes (this helps soften the taste of the raw onion).

Rub each tuna steak on both sides with a little oil and smoked paprika, and season them well. Cook the tuna on the hot barbecue for 2-3 minutes on each side for medium, or 3-4 minutes for well done (and less for rare tuna, but serve it this way only if it is very fresh). It is easy to see if the tuna has cooked on one side, as the fish will turn opaque from the bottom upwards when looked at from the side. Remember that the fish will continue to cook when removed from the barbecue.

Serve with the cucumber relish and a wedge of lemon or lime to squeeze over.
