- 400grams pearl couscous, rinsed
- 1 2/3 cup vegetable stock
- 1 small white onion, peeled and diced
- 4 cloves garlic, peeled and diced
- 100grams spinach, washed and drained
- 100grams kale, washed and drained
- 1tablespoons canola oil
- 1 pinch salt
- 1 pinch cracked black pepper

Description
This superfood side dish is packed with greens and mildly seasoned.
Method
Step 1 of 5
Place the couscous and 400ml of the vegetable stock in a pot and bring to the boil, allow to simmer for 25 minutes.
Step 2 of 5
Heat up a pan to a medium heat the canola oil and fry the onion and garlic for 4 minutes.
Step 3 of 5
Add the spinach, kale and seasoning to the pan and toss while cooking for 1 more minute before removing from the heat.
Step 4 of 5
Once the pearl couscous is cooked, remove from the heat and allow to cool slightly.
Step 5 of 5
Combine the couscous with the rest of the ingredients before serving.
