- 400grams pearl couscous
- 2 1/3 cup vegetable stock
- 1 small red onion, peeled and diced
- 4 cloves garlic, peeled and diced
- 80grams black olives, pitted and halved
- 80grams cherry tomatoes, cut into quarters
- 60grams pine nuts
- 2tablespoons sesame oil
- 3 stalks scallions, sliced

Description
A warm middle eastern style side dish with smooth and well balanced flavours.
Method
Step 1 of 7
Place the couscous and 400ml of the vegetable stock in a pot and bring to the boil, allow to simmer for 25 minutes.
Step 2 of 7
Heat up a pan to a medium heat with 1 tablespoon of sesame oil and fry the pine nuts for 6 minutes until browned.
Step 3 of 7
Remove the nuts from the pan and set to one side.
Step 4 of 7
Add the rest of the oil to the pan and fry the garlic and onion for 6 minutes.
Step 5 of 7
Add the olives to the pan and then add the pearl couscous and cook out for 10 more minutes.
Step 6 of 7
Incrementally add the rest of the vegetable stock when need to loosen up the couscous and keep cooking for 5 more minutes.
Step 7 of 7
Once the couscous is cooked, remove from the heat and serve with scallions, tomatoes and pine nuts to garnish.
