  • 1 small red onion, peeled and diced
  • 1 medium pomegranate, seeds only
  • 100grams vegan feta, crumbled

Description

A fresh and salty couscous with refreshing pomegranate seeds.

Method

Step 1 of 3

Place the couscous and 400ml of the vegetable stock in a pot and bring to the boil, allow to simmer for 25 minutes.

Step 2 of 3

Once the pearl couscous is cooked, remove from the heat, drain and allow to cool slightly.

Step 3 of 3

Combine the couscous with the rest of the ingredients before serving.
