- 1 2/3 cup vegetable stock
- 1 small red onion, peeled and diced
- 4 cloves garlic, peeled and diced
- 4 medium radish, sliced
- 1 medium orange, juice and zest
- 1tablespoons canola oil
- 1tablespoons basil, chopped

Description
A light, refreshing and zesty side dish.
Method
Step 1 of 5
Place the couscous and 400ml of the vegetable stock in a pot and bring to the boil, allow to simmer for 25minutes.
Step 2 of 5
Heat up a pan to a medium heat the canola oil and fry onion and garlic for 4 minutes.
Step 3 of 5
Remove the onion and garlic from the heat and set to one side.
Step 4 of 5
Once the pearl couscous is cooked, remove from the heat and allow to cool slightly.
Step 5 of 5
Combine the couscous with 2 tablespoons of orange juice, zest and the rest of the ingredients before serving.
