For the dip
  • 4tablespoons yoghurt
  • 2tablespoons harissa paste
For the garnish
  • 1 small red chilli, sliced
  • 1tablespoons parsley, chopped
  • 2 medium eggplants, cut into chips
  • 1tablespoons chilli oil
  • 1 pinch salt
  • 1teaspoons cracked black pepper

Description

Spice up eggplant with this creamy & spicy dish.

Method

Step 1 of 3

Pre-heat the oven to 180°C. Slice the eggplants into chips and cover evenly with the oil, salt and pepper.

Step 2 of 3

Bake in the oven on a roasting tray for 20 minutes. While they are baking, mix the yoghurt and harissa paste together and set to one side.

Step 3 of 3

Once the eggplants are roasted, serve with the harissa dip and garnish with chilli and parsley.
