  • 1 clove garlic, finely chopped
  • 1tablespoons mint, chopped
  • 1tablespoons balsamic vinegar
  • 1teaspoons soft goat's cheese or ricotta, for the crostinis
  • 10 mint (to garnish)

Method

Step 1 of 1

Preheat a griddle. Slice 1 eggplant thinly then cut into half moons and toss in 1 tbsp olive oil. Mix together 1 tbsp olive oil, 1 finely chopped garlic clove, 1 tbsp chopped mint,1/2 tbsp balsamic vinegar, and seasoning. Chargrill the eggplant on the griddle for 2 minutes on each side. Toss in the oil mixture and check the seasoning. Place 1 tsp of soft goat’s cheese or ricotta on top of each crostini, top with the chargrilled eggplant, and garnish with mint.
