Description

This simple sour cream based slaw is a deliciously different way to enjoy fresh leeks.

Method

Step 1 of 2

Place the sliced leek in a colander in the sink and pour over boiling water to soften and set aside to cool. Tip the grated carrot and apple into a large bowl and pour over the lemon juice.

Step 2 of 2

Add the cooled leeks to the bowl with the apple and carrot, season well, stir in the sour cream and serve.
