- 2-3 sprigs thyme
- 8 fresh figs, halved lengthways

Description
If you are lucky enough to have access to home-grown figs, you may find that they are not as sweet as their shop-bought cousins. Roasting them like this can intensify their sweetness.
Method
Step 1 of 3
Preheat the oven to 200°C (Gas 6). Combine the wine, sugar, vanilla extract, and lemon juice and zest in a large bowl. Remove the leaves from the sprigs of thyme, add to the mixture, and mix. Add the figs, and toss well to coat.
Step 2 of 3
Place the figs, cut-side down, in a baking dish and pour the wine mixture over. Roast the figs in the oven for 10-15 minutes or longer, depending on their size and ripeness, until they are tender when tested with a fork.
Step 3 of 3
Remove and brush the cooking liquid over the figs to glaze. Transfer the figs to serving plates and drizzle over a little of the cooking liquid, if desired. Serve with a spoonful of plain yoghurt. You can store the figs and the cooking liquid in an airtight container in the fridge, for 2-3 days.
