- 1 pinch black pepper (to serve)

Method
Step 1 of 4
Preheat oven to 190°C. Lightly grease a roasting pan with a little oil.
Step 2 of 4
Refer to image on how to peel parsnips and halve or quarter lengthways if large.
Step 3 of 4
Mix honey, mustard and olive oil together in a small bowl and season with salt and pepper.
Step 4 of 4
Arrange parsnips, in a single layer into the roasting pan and drizzle over the honey mustard mixture. Roast for 35–40 minutes, turning halfway through, until tender and golden.
