Grilled Asparagus With Fresh Mozzarella & Balsamic Glaze

- 3 bunch asparagus, trimmed
- 2tablespoons extra virgin olive oil (to toss)
- 1/2 cup balsamic vinegar
- 1 lemon, rind thinly sliced
- 1tablespoons brown sugar
- 1 fresh mozzarella, drained

Step 1 of 3
To make balsamic glaze, combine balsamic vinegar and brown sugar in a small saucepan. Bring to the boil. Reduce heat and simmer for 5-8 minutes or until reduced by a third. Set aside to cool.

Meanwhile, toss the asparagus in 2 tbs oil to coat and season with salt and pepper.

Preheat a chargrill over high heat, or a barbecue until hot. Cook asparagus for 1-2 minutes each side or until lightly charred and tender. Transfer to a serving plate. Tear mozzarella into pieces and serve with asparagus. Season with salt and pepper. Garnish with lemon rind and drizzle with balsamic glaze. Tip 1: Kick up the heat by sprinkling the asparagus with chilli flakes along with the salt and pepper. Tip 2: Juice the leftover lemon and freeze in ice-cube trays.
