  • 2 long red chillies, deseeded
  • 1 bunch coriander
  • 600grams long-shaped eggplant
  • 2 gourmet tomatoes, deseeded
  • 1/2 cup extra virgin olive oil
  • 5milliliter extra virgin olive oil spray
  • 230grams pitted Sicilian olives
  • 2tablespoons pine nuts
  • 2 cloves garlic, crushed

Method

Step 1 of 2

Heat a chargrill pan over medium-high heat. Combine half the coriander with garlic and 1/3 cup oil in a bowl. Season. Combine remaining coriander and oil with chilli, olives, tomato and pine nuts in a bowl.

Step 2 of 2

Spray eggplant slices with oil and chargrill for 2 minutes on each side or until charred and softened. Place on serving plate and top with olive mixture. Drizzle over coriander oil and serve.
