  • 1 clove garlic, crushed
  • 1 bread stick, thickly sliced
  • 2 bunch basil, shredded
  • 1 small red onion, finely diced
  • 4 roma tomatoes, diced
  • 3tablespoons extra virgin olive oil
  • 1tablespoons balsamic vinegar
  • 1 bunch kale, stripped, finely sliced

Method

Step 1 of 3

Preheat oven to 180°C. Line a baking tray with baking paper. Combine oil and garlic in a small bowl.

Step 2 of 3

Remove kale leaves from centre vein and finely slice. Add to a bowl with tomato, onion and basil. Toss to combine. Season to taste with salt and pepper.

Step 3 of 3

Drizzle bread slices with garlic oil and place on tray. Bake for 2-3 minutes until golden. Drizzle remaining garlic oil and balsamic vinegar over kale mixture. Pile mixture onto toast slices and garnish with fresh basil leaves.
