- 100grams pitted green olives
- 1 lemon, grated zest
- 1 pinch black pepper
- 1 garlic clove
- 1tablespoons olive oil
- 15grams basil leaves
- 1/2teaspoons tapenade
- 1 basil, Strip of (to serve)
Method
Step 1 of 1
Purée 100g pitted green olives with grated zest of 1/2 lemon, black pepper, 1 garlic clove, 1 tbsp olive oil, and 15g basil leaves in a blender or food processor. Taste to check the seasoning. Mound 1/2 tsp of tapenade onto each oatcake with a slice of sun-blushed tomato to garnish and a strip of basil to serve. Use sun-dried tomatoes instead of sun-blushed ones, if you prefer.
