  • 2 large peaches, halved, destoned
  • 5milliliter virgin olive oil spray
  • 120grams goat’s cheese
  • 2tablespoons olive oil (to drizzle)
  • 1 1/2tablespoons lemon thyme leaves
  • 2tablespoons rosemary sprigs (to serve)
  • 1/2 crusty baguette, cut into 1cm-thick slices
  • 8 slices prosciutto

Method

Step 1 of 3

Heat a barbecue grill plate or chargrill on medium-high. Cut each peach half into 4 wedges. Tear prosciutto in half lengthways. Wrap peach wedges with a strip of prosciutto.

Step 2 of 3

Spray baguette slices with oil and cook on grill with wrapped peach wedges for 1-2 minutes on each side or until charred and golden.

Step 3 of 3

Spread toasts with cheese and sprinkle with lemon thyme. Top with a peach wedge and drizzle with oil. Season with freshly ground black pepper and serve garnished with rosemary sprigs.
