- 2 ripe pears, peeled, cored, quartered, sliced
- 3 cup watercress sprigs, trimmed
- 1tablespoons extra virgin olive oil
- 2teaspoons honey
- 1tablespoons white wine vinegar
- 8 slice sourdough bread
- 2tablespoons dijon mustard
- 150grams blue castello cheese, sliced
- 1 cup cheddar cheese, grated
- 2 stalk celery, thinly sliced

Method
Step 1 of 3
Preheat grill to high. Place bread slices on 2 baking trays and lightly toast both sides. Spread one side of bread with mustard. Top with pear. Sprinkle with grated cheese and top with blue cheese.

Return to grill for 3-4 minutes or until cheese melts. Drizzle with honey.
Step 3 of 3
Meanwhile, gently toss watercress, celery, oil and vinegar in a bowl. Serve with the crostini.
