8 Ingredients

  • 2 smoked trout fillets
  • 200grams Greek yogurt
  • 1tablespoons cream cheese
  • 1/2teaspoons lemon juice
  • 1teaspoons creamed horseradish
  • 1 handful fresh dill (plus more for topping)
  • 1 pinch freshly ground black pepper
  • 1 ready-made Melba toast (to serve)

Description

Look for freshly smoked, rather than vacuum-packed, trout.

Method

Step 1 of 2

Whiz a couple of smoked trout fillets with some Greek yogurt and a spoonful of cream cheese, taste, then add a little lemon juice, a teaspoon of creamed horseradish, and a handful of fresh dill and whiz again.

Step 2 of 2

Add plenty of freshly ground black pepper, and spoon into individual ramekins. Top with a sprig of fresh dill, and serve with ready-made Melba toast.
