  • 2tablespoons whole mint leaves (to garnish)
  • 1/4teaspoons ground cardamom
  • 1teaspoons ground cinnamon
  • 1 pinch ground cloves
  • 1/4 cup pure maple syrup
  • 1/2 cup brown sugar
  • 1/4 cup rum

Method

Step 1 of 3

Combine sugar with cinnamon, cardamom and cloves in a shallow dish. Add pineapple wedges and turn to coat. Set aside for 20 minutes.

Step 2 of 3

Preheat a barbecue grill on medium-high heat. Remove pineapple from sugar mix. Add rum and maple syrup to remaining sugar mix, stirring to dissolve sugar.

Step 3 of 3

Cook pineapple wedges for about 5 minutes each side or until lightly charred. Drizzle with rum sauce and scatter with mint leaves. Serve with minted yoghurt.
