  • 1 cinnamon stick
  • 3-4 mandarins
  • 1tablespoons honey
  • 1 vanilla bean, split
  • 500grams honey sponge roll
  • 820grams can apricot halves in fruit Juice

Method

Step 1 of 3

Strain apricots and place syrup into a medium saucepan. Add vanilla bean, cinnamon stick and honey. Bring to the boil, then reduce heat and simmer for about 10 minutes until liquid has reduced and is syrupy.

Step 2 of 3

Peel fresh mandarins and separate into segments. Add mandarin segments and apricots to pan and warm over low heat for 5 minutes.

Step 3 of 3

Thickly slice the sponge roll and place a slice into each serving bowl. Spoon over fruit mixture with a little syrup. Serve with cream or ice cream, if desired.
