Poached Fruits with Honey Yoghurt & Pistachios

- 1 cup sugar
- 2 cardamom pods
- honey (to serve)
- 1 orange, peeled and segmented
- 1 vanilla bean, split
- 2/3 cup thick natural yoghurt
- 12 dried apricots
- 1 cup orange juice
- 1/4 cup pistachio kernels, chopped (to serve)
Method
Step 1 of 5
Combine juice, sugar, water, vanilla bean and cardamom in a saucepan. Stir over low heat until sugar has dissolved. Bring to boil then simmer for 5 minutes until thickened slightly.
Step 2 of 5
Add figs and apricots and reduce the heat. Simmer for 10 minutes until fruit is soft and plump.
Step 3 of 5
Remove vanilla and cardamom.
Step 4 of 5
Divide orange segments among serving bowls. Spoon over warm fruit and syrup.
Step 5 of 5
Serve warm, topped with yoghurt, honey and pistachios.
