- 250grams mixed green and black olives, unstoned
- 2 cloves garlic, finely sliced
- 1 orange, zest only
- 2 fresh red chillies, deseeded and very finely chopped
- 1teaspoons cracked black pepper
- 3tablespoons extra virgin olive oil
- 150grams anchovies in oil
- 2 cloves garlic, finely sliced
- 1 small handful dill, finely chopped
- 1teaspoons white wine vinegar
- 1 pinch freshly ground black pepper
- 125grams unskinned almonds
- 1teaspoons sea salt
Method
Step 1 of 4
Put the olives in a small bowl with the garlic, orange zest, chillies, and peppercorns. Drizzle over the oil, give the olives a stir, then leave to marinate in the refrigerator for 1 hour.

Meanwhile, put the anchovies and their oil in a small serving bowl. Add the garlic, dill, and vinegar, season with black pepper, then stir to combine. Leave to marinate for at least 30 minutes.

While the olives and anchovies are marinating, put the almonds in a small frying pan and heat gently. Sprinkle over the salt, toss to coat, then cook, stirring frequently, for 5 minutes, or until lightly toasted.
Step 4 of 4
Transfer the almonds, olives, and anchovies to individual small serving bowls, or one serving dish, and serve at room temperature with drinks.
