  • 1 cantaloupe melon, halved, peeled and deseeded
  • 2tablespoons chopped mint
  • 1/2-1 red chilli, deseeded and finely chopped , plus strips of chilli to garnish
  • 1 egg, white only
  • 2 cantaloupe melons, quartered and deseeded
  • 12 slices ham, fat removed

Method

Step 1 of 4

Make the sorbet. Scoop the melon flesh into a food processor or blender and blend until smooth. Stir in the mint and add chilli to taste.

Step 2 of 4

Transfer the mixture to an ice cream maker and churn until thick. Alternatively, pour the mixture into a plastic box and freeze for 4 hours, beating once or twice to break up the ice crystals.

Step 3 of 4

Mix in the egg white and continue churning until the sorbet is thick enough to scoop. If you are not serving it immediately, transfer the sorbet to a plastic box and store in the freezer. Otherwise, freeze for a minimum of 2 hours until firm.

Step 4 of 4

Arrange the melon quarters and ham on 6 serving plates. Use warm spoons to scoop out the sorbet and put 2 spoonfuls of sorbet on top of each melon quarter. Garnish with strips of chilli and serve immediately.
