- 25grams palm sugar
- 1 lime, grated rind and juice
- 2tablespoons water
- 1/2teaspoons cracked black peppercorns
- 500grams mixed prepared fruits, such as pineapple or peach slices or mango wedges
- 1/2 cup ice cream (to serve)
- 1 slice lime (to serve)
Method
Step 1 of 3
Put the sugar, lime rind and juice, measurement water and peppercorns in a small saucepan and heat over a low heat until the sugar has dissolved. Plunge the base of the pan into iced water to cool.
Step 2 of 3
Brush the cooled syrup over the prepared fruits and cook under a preheated hot grill for 6-8 minutes on each side, or over a preheated hot gas barbecue or the hot coals of a charcoal barbecue, for 3-4 minutes on each side until charred and tender.

Serve with scoops of cinnamon or vanilla ice cream and lime slices.
