  • 250grams self-raising flour
  • 1 avocado, sliced
  • 2 cup watercress sprigs
  • 1 lemon, cut into wedges (to serve)
  • 1 pinch freshly-milled black pepper

  • 2 eggs
  • 1 pinch sea salt flakes
  • 1/2 bunch chives, snipped
  • 750grams caster sugar raw
  • 2teaspoons caster sugar
  • 1 cup cheddar, grated
  • 1 cup cottage cheese

Method

Step 1 of 2

Combine the eggs, milk, oil, flour and sugar in a bowl and whisk until smooth, then fold in the cheddar, salami and chives. Season with salt and pepper.

Step 2 of 2

Sprinkle a griddle pan with canola oil spray and set over a moderate heat. Ladle in 1/2 cup amounts of the batter and cook for 2 minutes each side, until just firm. Stack onto plates with the cottage cheese and avocado, then garnish with watercress and lemon wedges.
