- 200grams rhubarb, washed and chopped
- 80grams sugar
- 1/2-plus 1 extra tbs cup water
- 1 large lemon, washed & quartered
- 1 small red chilli, finely diced
Description
A tangy and spicy spread for toast.
Method
Step 1 of 4
Wash the lemon under a hot tap to remove the wax. Wash your storage jar under very hot water to sterilise.
Step 2 of 4
Place all your ingredients into a bowl and leave in the fridge for 2 hours. Remove from the fridge and empty contents into a saucepan and boil for 10 minutes while stirring.
Step 3 of 4
Bring the heat down to low and allow the contents to simmer for a further 10 minutes stirring occasionally. Remove from the heat and pick out the 4 quarters of lemon and allow to cool.
Step 4 of 4
Once cooled, take a few scoops out and keep to one side and blend the rest, then re-introduce the scoops back before storing.
