  • gherkins (to serve)
  • 1 long red chilli, deseeded and finely chopped
  • 1tablespoons parmesan, finely grated
  • cheese (of choice to serve)
  • olives (to serve)
  • 1teaspoons cumin seeds, toasted
  • 1 pinch sea salt flakes
  • 1 shortbread mix

Method

Step 1 of 5

Preheat oven to 160 C. Line 2 baking trays with baking paper. Dough needs to be chilled for 20 minutes.

Step 2 of 5

Remove sugar from shortbread mix and replace with parmesan. Beat until light and fluffy. Stir in cumin seeds and chilli. Continue with basic recipe.

Step 3 of 5

Roll dough out between sheets of baking paper until 4mm thick. Using a 5cm round biscuit cutter, cut 20 biscuits from dough.

Step 4 of 5

Place onto prepared trays. Sprinkle with sea salt flakes. Bake for 15 minutes or until light, golden and firm to the touch. Cool on trays.

Serve biscuits on a cheese platter with olives and gherkins
