  • 360grams white chocolate, roughly chopped
  • 6 plain waffle cones

Description

Recreate cinema magic with this easy apricot ice-cream choc-top recipe. Everyone will love these white chocolate-dipped ice-cream cones.

Method

Step 1 of 6

Preheat oven to 200°C/180°C fan-forced. Line a baking tray with baking paper.

Step 2 of 6

Place apricot in a medium baking dish. Sprinkle with sugar and pour over 1/3 cup cream, then bake, stirring sauce halfway through cooking, for 30 minutes or until apricot is soft and sauce has thickened. Using a fork, mash apricots into sauce until combined. Cool for 1 hour.

Step 3 of 6

Using an electric mixer with a whisk attachment, whisk milk and remaining cream until soft peaks form. Fold in apricot mixture. Spoon mixture into a 11 x 21cm (7cm deep) metal loaf pan. Freeze for 4 hours or overnight, if time permits.

Meanwhile, place 90g chocolate on a baking tray lined with baking paper. Bake for 12 minutes or until deep golden and hard. Cool. Place in a food processor and process until crumbs form.

Scoop ice-cream into cones, then place on a baking tray and freeze for 20 minutes or until firm.

Step 6 of 6

Place oil and remaining chocolate in a microwave-safe bowl. Microwave on high for 2 minutes, stirring every 30 seconds or until melted. Cool for 5 minutes. Dip top of each ice-cream into white chocolate mixture to coat, then sprinkle with white chocolate crumb. Return to tray and freeze for 5 minutes to set. Serve.
