  • 300milliliter cream, whipped
  • 1/2 cup milk
  • 4 sprig mint
  • 400grams white chocolate, melted (save 200g for later)
  • 2 eggs, separated
  • 4tablespoons caster sugar
  • 1/2 cup frozen peas

Method

Step 1 of 3

Place peas, milk and sugar in a small saucepan. Stir over medium heat until sugar is dissolved and milk comes to the boil. Transfer to a food processor with mint and egg yolks. Process until smooth. Strain into a bowl.

Step 2 of 3

Stir melted chocolate and cream into pea mixture. Beat egg whites until soft peaks form. Fold into pea and chocolate mixture. Spoon into serving glasses. Chill for 2 hours.

Step 3 of 3

Melt extra chocolate until smooth, then spread on a large lined baking tray until 2mm thick. Sprinkle with extra mint leaves. Chill for 10 minutes or until set. Break into pieces. Serve mousse topped with chocolate shards.
